VARIEtY: 50% Xarel.lo, 20% Parellada, 20% Macabeu, 10% Chardonnay

AGEING: Mínimum 25 months in “rima” in contact with Yeats.
FERMENTATION: Slow fermentation of cold wine for 2-3 months in the bottle.

TASTING NOTES: The prime feature is its persistent strand of small bubbles. The colour is very pale with green notes. The nose is very floral and fluity: notes of apple and peach and tropical fruit, pineapple and citrus notes with a banana.
In the mouth is very dry and cool, creamy and full bodied with some acidity that gives freshness and vivacity. Aging as a Reserva gives sensations that persist over time.
WINEMAKER RECOMMENDATIONS: Store in a vertical position in its case. Keep in a dry, cool and dark location. As an Gran Reserva, I prefer serve it at between 6-10 ºC.
FOOD PAIRING: As an Reserva, It can be enjoyed on any occasion. Imagine an appetizer of ham, a tuna or tuna with raw oysters, grilled prawns after a passing some ravioli stuffed with seafood, veal a bloody end with a par roasted orange or cinnamon ice cream. All perfectly combine this Brut Reserve. Or if not, good tapas and Galician octopus, or some good montaditos. And if not, alone, with good company.
