GRAPE VARIETIES: 40% Parellada, 20% Xarel.lo, 25% Macabeo and 15% Chardonnay

VINTAGE: 2007
AGING: Mínimum 70 months in rima in contact with yeast.
FERMENTATION: Slow low-temperature fermentation for 2-3 months in the bottle.

TASTING: With a good release of very fine bubbles, the colour is pale yellow with many greenish notes. The aroma is floral with notes of spices and orange tree blossom. The taste is dry, with soft sensations, certain flavors of toast, roasted nuts combined with ripe fruit such as apples and apricots, leaving a complex aftertaste that lasts in time.
Made of one of the best vintages, retaining the characteristics of the vintage, but without losing its personality, even increasing feelings of balance and complexity that makes it unique.
recoMmendaTions: Store in a vertical position in its case. Keep in a dry, cool and dark location. As a Gran Reserva, I recommend serving it at between 6-10 ºC.
PAIRING FOOD: The Honour (Homenatge) was created because the owner of “Cal Rei” Jaume Giro liked aged cava but not so dry as  Brut Nature. This cava is rounded and balanced. Its aging time gives it great complexity of flavors and aromas, and a rare freshness for an aged cava it is. For this reason, it will combine perfectly with both  simple dishes of Catalan cuisine, such as bread with tomato and ham or cannelloni or some more complex new dishes as pastry filled with seafood or duck deconstructed, and being a Brut, it is perfect for desserts of any kind. It will always be a good reason to have a party.

Special because we've added a thermometer on the back label that will indicate if the temperature of the cava is the best to serve it.
