GRAPE VARIETIES: 50% Xarel.lo, 20% Parellada, 20% Macabeo and 10% Chardonnay

AGEING: Minimum 16 months in “rima” in contact with Yeats.
FERMENTATION: Slow fermentation of cold wine for 2-3 months in the bottle.

WINEMAKER'S TASTE: Good very fine bubbles with detachment. A very pale yellow with greenish hints. Very floral and fruity in the nose: notes of apple and peach and tropical fruit, pineapple and citrus notes with banana.In the mouth is very sweet, creamy and full bodied with some acidity very balanced with sweetness, that gives freshness and vivacity in the mouth. Aged as a Reserva gives a very pleasant sensations which persist over time.
recomMENDATIONS: Store in a vertical position in its case. Keep in a dry, cool and dark location. As a Reserva, I prefer serve it at between 6-10 ºC.
PAIRING FOOD: This is the most modern and fashion cava for desserts. As a Reserva and a Sweet one, is suitable with cakes and confectionery. It is the best for matured fruits and ice creams. Try to match with foie and cheese, o salmon with toast. It’ll surprise you. Sweet is the perfect competent to end all the meals.
