TYPE: Brut
GRAPE VARIETIES: 40% Xarel.lo, 30% Parellada, 20% Macabeo and 10% Chardonnay

VINTAGE: 2014
AGING: Mínimum 30 months in “rima” in contact with yeast.
FERMENTATION: Slow low-temperature fermentation for 2-3 months in the bottle.
TECHNICAL INFORMATION: % Alcohol 11,50%

Tasting: Multiple tiny bubbles create numerous streams in a glass. The colour is yellow with green notes. The aroma is very frutty: notes of apple and peach and tropical fruit, pineapple and citrus. The taste is dry and fresh, the sensations of some acidity are harmonised by a bit of sugar, typical for bruts. Light notes of a Gran Reserva aging. It is full-bodied, very well balanced. The aftertaste persists over time.
recomMENDATIONS: Store in a vertical position. Keep in a dry, cool and dark location. As a Reserva, I recommend serving it at between 5-9 ºC.
PAIRING FOOD: As Cava Gran Reserva, you can enjoy on any occasion. Imagine an appetizer of Iberico ham, some oysters, shrimps, partridge,  foie gras, anglerfish, beef carpaccio, finishing with some Santa Teresa toasts. All perfectly combined and united by this brut. Another idea is to try it with some Galician octopus tapas, or some good “montaditos”. And if not, without any food, in a good company of family and friends.
