TASTING: With a very good release of fine bubbles, the colour is pale yellow with many green hints. The aroma is open, with notes of peach and apple orchards. The taste is complex, very dry, with a creamy effervescence that gives it vivacity and lightness, with aging notes and slight notes of roasted nuts and, very well balanced for a vintage cava. It is very persistent, leaves fresh aftertaste which lasts in time
recomMENDATIONS: Store in a vertical position in its case. Keep in a dry, cool and dark location. As a Gran Reserva, I recommend serving it at between 6-10 ºC.
PAIRING FOOD: Few cavas have the body that long aging gives to  SELECTE, our most harmonious Brut Nature. It is so well structured that it seems to be a young cava. Its energy is transmitted to the dish, giving it additional sensations. That is why we can combine it with very different textures: meat, fish, pasta, rice dishes or combined meat and seafood dishes. Taste it with an angler and Palamos prawns. It is unique. And it goes stripping the sensations that promote good sushi or tempura. Just try it!
